 <title>Holy crap my &quot;vacation&quot; is over</title>

<description><![CDATA[The holidays are over!    The amount of stuff I had to do in the past two or three weeks has caused a lot of stress, reduced my overall sleep and made me wish I was back at work.  When I say "stress" I don't mean the kind that causes a little bit of a headache either; I mean full-out panic attack, "oh my God am I having a heart attack?" kind of stress.  Well, here I am, back at work!  Hooray!  There are still some things I have to do...but I can feel free to say "no" as <i>new</i> things pop up now, since I am back at work.  Working 6 days a week actually has advantages.  Who knew?   Thank God for being a workaholic!<br />
<br />
Good news is I saw all my kids, and they actually took portraits for me as my Christmas present.  I will scan them when I can and show off the kiddies in their best duds, which for one child means a lovely dress and for the other two, their dress uniforms.  Plus I do have some Christmas pictures that I will eventually put up on Facebook, which, if you haven't friended me yet...you really need to.  I log in to Facebook more frequently than I do my web site, and  these  rare posts  wind up over at Facebook anyway as notes.]]></description>

 <title>Please help spread the joy</title>

<description><![CDATA[If you have not yet donated to <a href="http://www.lbeh.org">LBEH.ORG</a>, please consider helping send a military member home for the holidays, who otherwise would not be able to go home on their own.  When Ernie Stewart started this in 2001, I donated; I donated what little I could every year, as my kids grew & finished school; as one entered college, and then as two joined the military themselves.  As a military Mom I now understand exactly what it was I was helping out with every year by donating:  I now know, first-hand, how it feels to have a true Homecoming.  While my own kids were able to get home without the assistance of LBEH, so far 118 service people in need have been able to say "hi mom!" and walk through the door...because of Ernie Stewart and the help of his selfless assistants, and donors.  As of this posting they still need <i>$14,614.31</i> in donations or Frequent Flier miles to handle this wave of requests.  If you have donated...Thank you.  I love you.  <title>Since Thanksgiving is right around the corner...</title>

<description><![CDATA[This is the first year in 25 years that I am NOT making this stuffing.  If you make it you will be cursed:  you will like it, your family will like it, and you will be forced into cutting hundreds of chicken gizzards & hearts by hand for decades to come.<br />
<br />
My ex's mother  came up with this.  It's probably better than the turkeyitself so make it, don't bake the turkey, and just put a bowl of it in front of you while you're watching TV Thanksgiving day.<br />
<br />
Stuffing<br />
<br />
about 6 - 7 pounds of gizzards & hearts<br />
2 slices bacon, finely chopped<br />
3 slices deli ham, finely chopped<br />
1 onion, finely chopped<br />
the leafy part of 2 sticks celery, finely chopped<br />
about 2 tbsp fresh parsley, finely chopped<br />
about 2/3 stick butter<br />
Italian style bread crumbs<br />
about 4 - 6 envelopes chicken bouillon powder (to taste)<br />
salt & pepper to taste<br />

Clean gizzards and hearts. Look at each gizzard and make sure there is no yellow-green part on the outside of it; if you find an odd one, peel it away and discard. It's easy and pulls away like a sheet of plastic, so just yank it off. Then put gizzards and hearts in a large stock pot. Cover with water and bring to a boil, cover the pot. Simmer for about an hour and a half, until the meat is cooked & tender.<br />

Let it cool to room temperature. Do not drain; you will be using the water for gravy.<br />
<br />
This is the hard part--I've been doing this for over 20 years, and I have never found a gadget that will do what needs to be done; so, at this point have a seat, grab a knife and slice the gizzards and hearts into thin slices. Discard the gristle in the middle of each gizzard. If you're fast, this will take about an hour.<br />
<br />
You can then either continue on to the next step, or if you did it ahead put the gizzards back into the water and stick it in the freezer until the night before.<br />
<br />

To make stuffing:<br />
<br />
Chop the onion, bacon, ham, parsley, & celery leaves. Melt butter in a pot and put in the chopped ingredients. Sautee until the onions start to turn clear (but not brown). Add the gizzards and hearts and stir. Add a about two cups of the water and simmer; you are going to be cooking down the liquid until it's about half. While this is happening put in three of the bouillon packets and a little pepper; add more of the bouillon and a little salt, until it tastes the way you want it. Remember the Italian bread crumbs have a little salt in it too, so don't make it TOO salty.<br />

Once the liquid is reduced to about half (or a little less than half) slowly add in bread crumbs until the mixture sticks to itself and has the texture of stuffing. It's going to be about a cup or less, if you reduced the liquid enough. Taste the stuffing one more time to see if it's not bland--if you need to, add another bouillon envelope or some more salt.<br />

Let it cool off enough to handle. Wait until just before you put the turkey in the oven--this is IMPORTANT, as you are putting warm stuffing into a raw turkey; you don't want Salmonella for Thanksgiving! So just before it's time to put the bird in the oven, stuff the bird. You will have enough stuffing to stuff the cavity and the flap of skin by the neck of a 22 - 24 pound bird. Stuff the bird, tuck the legs in and tuck the wings under the bird to hold the skin flap you stuffed closed. season the top of the bird & put it in the oven. If you have any leftover stuffing set it aside and warm it through before you serve dinner; since all of the meat is cooked already, you can eat it without stuffing it into the bird (but it does impart a great taste to the turkey as the bird cooks).<br />
<br />
Use the reserved water as a base for gravy. ]]></description>

 <title>2012: An end to intelligence.</title>

<description><![CDATA[<i>Because of a movie,</i> people are now up in arms and in a panic over the date Dec 21, 2012.  The sky is falling!  We're all gonna die!  Everyone is pointing to the end of the Mayan calandar, but there is a <a href="http://news.aol.com/article/world-wont-end-in-2012-mayans-insist/713074?icid=webmail|wbml-aol|dl2|link2|http%3A%2F%2Fnews.aol.com%2Farticle%2Fworld-wont-end-in-2012-mayans-insist%2F713074">Mayan elder out there saying "what about the date 4772?</a>  There are inscriptions at Mayan sites that mention dates far, far beyond 2012.  Only the calendar ends in 2012, and it ends because the folks who wrote the calendar only inscribed 13 eras called Baktuns (or eras), because 13 was sacred to the Mayans.  In other words if they were still around to make calendars...they probably would have inscribed another 13 Baktun calendar for us.  Hey, they worked in advance.  Look at the calendar on your wall.  It only goes to the end of December on any given year.  This doesn't mean that January 1 will never come around, it just means we have an easier way of making a new calendar--a printing press--we don't have to use rock cutting tools.  We don't have to make a nice big one that will last until the next stone worker decides to start looking for a good rock to carve.<br />
<br />
This won't stop folks from being in a panic because of a movie.  Everyone was equally terrified over the weather when "The Day After Tomorrow" came out, and holy crap the fuss that was made out of 2000 was amusing.  When I was a girl I remember people declaring that the world would end in 1976, as this was the 200th anniversary of the New World and somehow that was significant; people looked at Revelation and pointed out passages that "proved" 1977 would never come.  For as long as there have been people, there have been end time prophesies of one kind or another which seems convincing enough but if you look closely at it you realize that the "answer" to surviving the apocolypse being predicted, or the key to redemption after it, revolves around following one person of group or cult's or religion's belief systems.<br />
<br />
December 2012 is just another date.  If you don't believe that, if you think I am full of it and that the world is gonna end and I am going to be completely unprepared, then do me a favor and on December 11 of that year, turn over all your savings, real estate, stocks, and jewelry to me.  You're not gonna need it anyway.  I'll take good care of it all for the 24 hours I have left, ok?  :-p]]></description>
